Ingredients

45 minutes
4 person
  • Halfkg red carrot grated
  • 100 gramskhowa or mawa
  • Some chopped cashews
  • Some raisins
  • Halftsp elaichi powder
  • 1and half cups of milk
  • 1/4th cup of ghee
  • Nolen gurr or khejur gurr as per your taste

Steps

    First grate the carrots and lerp them aside. Now heat a pan & add 2 tbsp of ghee in it. Now fry the chopped cashews and raisins and keep them aside.

    Now add some more ghee and put the grated carrots in it. Now lower the flame, cover the pan and fry the carrots until it turns little mushy. You will notice that the colour of the carrot mixture has now changed.

    Then open the lid and add milk to it. Mix it well. Cover the pan and cook for on a low flame for about 10 mins. Once the milk started absorbing by the carrots, add the mawa/khowa in it and mix everything well. You will notice that it will now turn little watery consistency.

    Then I have added all the fried cashews and raisins in it and mix them well once again.

    Now once the milk has absorbed a bit, add the jaggery (nolen gur) as per your taste & mix it well. It would turn watery again. Now cook on medium flame until the milk is absorbed completely.

    Then add some elaichi powder and add the rest of the ghee and finally mix everything well. Now switch off the flame. Your authentic nolen gurer gajar er halwa is now ready to serve.
