Veg Kung Pao Noodles

Kung pao is a spicy stir fried dish which is prepared using vegetables, noodles or meat. I have used different vegetables, cottage cheese and noodles to make this delicious and spicy chinese dish. You can use tofu instead of paneer and different types of vegetables of your choice in this dish. Usually peanuts or cashew nuts are used in this dish, I have used cashew nuts here. It is a wholesome dish loved by kids.

First of all add little oil in a non-stick pan and add paneer to it. Shallow fry until light pink in colour. Now in the same pan, add cashew nuts and roast it until light pink in colour.

Add some salt and oil to the boiling water. Add noodles to it and cook it until it is 90% done. Do not over cook the noodles. Now take it out in a strainer and refresh it with cold water. Apply some oil and leave it aside.

To prepare the sauce, add dark soya sauce, light soya sauce, rice vinegar, sriracha sauce, brown sugar, sesame oil, corn flour, water and stock cube to a bowl and mix everything well.

Heat oil in a pan and add dry red chilli pieces to it along with ginger, garlic and spring onion white. Cook it on high heat for a minute. Now add bell pepper and mushrooms to it and cook it on high heat for 2 minutes. Now add spinach leaves to it and cook it for a minute.

Add prepared sauce to it and cook it on high heat for 2 minutes. Add noodles and mix everything well. Now add cottage cheese and cashew nuts to it and give it a good mix. Cook everything on high heat for 2 minutes then add spring onion and turn off the heat.

Garnish it with spring onion and sesame seeds and serve it hot.
