This is the season when pomelos are plentiful, but the green-skinned, pink-fleshed variety is rare. I love eating green-skinned pomelos because they're sweet and juicy, and the thick peel can be used to make pomelo sweet soup or candied pomelo. This time, I dried the peel to brew as a tea. It has a pleasantly bitter, slightly spicy taste and is great for soothing your throat and keeping warm as the seasons change.

1 container of dried pomelo peel
  • 1green-skinned pomelo

Steps

    Wash the pomelo thoroughly, then cut off the peel. Slice the peel thinly and arrange the slices on a tray.

    Dry the slices in the sun, covering them with plastic wrap or a thin cloth to keep them clean. If sun-drying, two sunny days should be enough to dry the peel. Alternatively, you can use a food dehydrator. Once the peel is dry, steep a lotus tea bag in a cup of hot water, then add a few slices of dried pomelo peel. Wait until the peel softens, then enjoy.
