Ingredients

  1. 4 cupschopped butternut squash, lightly seasoned with cinnamon powder
  2. 4 cupsfresh spinach
  3. 12eggs
  4. 1/8 teaspoonblack pepper
  5. 1/8 teaspooncrushed red pepper
  6. 1/8 teaspoonsalt
  7. 1/4 teaspoonthyme
  8. 1 tablespoonparsley flakes
  9. 1 tablespoonchopped dried onions
  10. 1 can (12 ounce)evaporated milk
  11. Butter cooking spray

Cooking Instructions

    Layer your chopped butternut squash and spinach in a large baking pan that has been sprayed with butter cooking spray ………..

    Combine all remaining ingredients into a large bowl and beat well, then pour into baking pan on top of butternut squash and spinach ……..

    Bake, uncovered, in a 400 degree oven for 45 minutes to 1 hour, or until middle is set (stick a butter knife in the middle before cooking time is up, if it comes out clean your quiche is done) ………

    Let cool for about 20 minutes before cutting, then cut into squares, serve and enjoy 😊!!!!!
