Wash the persimmons thoroughly. This helps keep your hands clean while peeling, since you won't rinse them again after peeling—water can soak in and cause spoilage during drying. Peel the persimmons, keeping the stems attached. Arrange the peeled persimmons on trays and place them in a dehydrator.

Set the dehydrator to 320°F (160°C) and dry for 8 hours. When the cycle is done, check if the persimmons are fully dried. If not, dry for a bit longer. Once dried, store the persimmons in an airtight container. This drying method makes the persimmons sweet, soft, and chewy.
