To celebrate the 100th anniversary of Taiwan, here's a classic Taiwanese treat: the combination of grass jelly and almond jelly, a must-have topping for shaved ice. When it snows abroad, I especially miss this flavor! Many friends are talking about going to the Shanghai Expo, but what I look forward to most are the international foods! I'm such a foodie—so let me share this very Taiwanese dessert with you. What does Taiwan taste like to you?
Tips:
1. Gelatin powder will set at around 104°F (40°C), so it will solidify at room temperature. To speed up the process, you can place the container in a bowl of ice water to cool it down.
2. When assembling, add the almond jelly mixture to the cup one spoonful at a time to avoid flooding the grass jelly. If this happens, gently rinse the grass jelly with drinking water and place it back in the cup.
3. Taiwan-shaped molds can be found at most baking supply stores. Other molds work the same way.
4. Gelatin powder here refers to jelly powder, not gelatin sheets.
Serving suggestion:
Drizzle with sweetened condensed milk or honey before eating for a taste of happiness from Taiwan!

Almond Jelly: 1. Mix the gelatin powder and sugar together, then add to a pot with the milk. Heat to 176°F (80°C). 2. Once cooled slightly, add the almond extract. 3. Pour into cups, filling about 80% full, leaving space for the grass jelly. 4. Let cool and set.

Grass Jelly: 1. Mix the gelatin powder and sugar together, then add to a pot with the water. Heat to 176°F (80°C). 2. Mix the instant grass jelly powder with 2 tablespoons (30 ml) water, then add to the pot. 3. Line the bottom of the mold with plastic wrap and secure with a rubber band.

4. Pour the grass jelly mixture into the mold. Tilt the mold side to side to prevent bubbles from forming on the top, or use a toothpick to pop any bubbles. 5. Let cool and set. To assemble (layering method): Once both jellies are set, place the Taiwan-shaped grass jelly into the almond jelly cup and fill in with more almond jelly mixture. Chill in the refrigerator.
