Oven Grilled Knife Fish (Eja Osan)

I bought this fish on one of my trip to Epe Fish Market; That is one trip I would love to take again. I bought this fish without knowing the name; I later found out it is one of Nigerian's highly priced seafood, and its fish known as Knife Fish in English, in Yoruba as Eja Osan or Dansarki in Hausa or in Igbo its called Azu Asa. It is a highly regarded and expensive delicacy and often listed on drowry/bride price list. This fish is one tasty piece of fish trust me.

Preheat oven 10mins at 200c

Blend pepper, onions, garlic and ginger; set aside
- 3
Wash and arrange fish in a bowl and set aside

Add salt, boullion, parsley, basil, oregano and the blended paste
- 5
Mix in properly; add honey if you wish to have the honey glazed flavor or brown sugar if you wish to have the sweet chilli flavor.

Place fish in a baking dish or baking rack and send into the oven for 25mins

Serve with anything or enjoy it with a glass of Irish Creame on the rock
