An easy peasy Breakfast dish that's not only popular in Maharashtra where it comes from but also all over the Country. Only this time for a change, it's with Foxtail Millet. This innovative twist with the Foxtail flakes is worth all the efforts. It turned out just as flavourful and aromatic as it's original counterpart. It also lends a perfect texture to the dish. Overall it's a healthy one pot dish by me for Breakfast, Brunch or even a perfect accompaniment at Tea-time or Shaam ki Chai especially in this Weather. It's a bliss when you have this super yummy dish piping hot right in the comfort of your homes with a favourite hot beverage also alongside when it is heavily pouring outside.

Heat oil in a kadai. Add chopped onion, peanuts, bengal gram and green chillies along with shredded ginger. Saute all that well for about 2 minutes. Roast them nicely until crisp and done.

Now add washed and well drained bajra flakes. Also add chopped coriander leaves. Mix well. Adjust salt at this stage. Cover and cook for about 3-4 minutes more.

It's all ready to be served hot. Squeeze lemon juice without fail. Enjoy this lovely looking and delicious Breakfast with your loved ones. Enjoy!
