Ingredients

  • 4 slicesthick cut bacon, cut into 1” pieces
  • 2andouille sausages, sliced
  • 12-15shrimp
  • 10 ozboneless skinless chicken thighs
  • 4 clovesgarlic, minced
  • 1 tbspbutter
  • 1onion, diced
  • 2 stalkscelery, diced
  • 1 1/4 cupsuncooked white rice
  • 2.5 cupschicken bone broth
  • 14 ozcan diced tomatoes, drained
  • 2 tbsptomato paste
  • 1bell pepper, seeded and diced
  • 1 tspdried thyme
  • 2 tsppaprika
  • 1 tspgarlic powder
  • 1 tsponion powder
  • 1/2 tspcayenne pepper

Steps

  1. 1

    Preheat oven to 350 degrees. In large ovenproof skillet, cook bacon until about half done. Add sausages and cook until bacon is crisp and sausages are browned. Remove from pan to a bowl.

    Cook chicken in pan, then remove to same bowl with sausage and bacon.

  3. 3

    Cook shrimp in pan, then remove to another bowl, separate from the chicken and sausage.

  4. 4

    Add butter, garlic, onion, celery, and bell pepper. Cook until tender.

  5. 5

    Add rice and stir to coat. Add broth, tomato paste, tomatoes, and seasoning. Return chicken, sausage, and bacon to pan.

  6. 6

    Bake for 30 minutes. Remove from oven, stir in shrimp, and bake an additional 3-4 minutes. Serve and enjoy!
