Cook rice and cool and drain, set aside

Char capsicum on gas, cool than peel burned skin, chopped finely ; set aside

Take a pan, add olive oil add garlic, when garlic is light brown add onion and cook until onions become translucent, add chopped capsicum and sweet corn, cook for 2-3 min, add fresh cream and mix well, add salt to taste and fresh crushed black pepper. Cook for 1-2 min more. Turnoff flame.

In a casserole add rice on bottom, creamy sauce over it, cheese over sauce, repeat it 2-3 layers, cheese on top. Bake at 190 degrees for 5-6 min in pre heated oven.
