A hearty, slightly spicy, beef stew. Mommy Lucia's recipe
Steps
- 1
In a large pot, add your oil and add your beef and chorizo. Brown the meat on all sides, about 10 min
- 2
Once the meat is browned, add your onion, and garlic. Sautee for about 5 min.
- 3
Add your tomato paste, pimenta pepper, and seasoning. Mix everything to combine.
- 4
Add about 3-4 cups of water to your pot. Bring to a rapid boil, then turn the hear down to medium low. Let the meat cook and tenderize in the "broth". This will take about an hour. Stir occasionally, and add water if you find it's evaporated too much. (Remember, if you add water, you may need to adjust your salt as you go along)
- 5
Once the meat is almost fully tenderized and almost shreds. Add your potatoes and cook everything for about 20min or until the potatoes are cooked through.
- 6
Serve with some fresh bread ♡
****** Note, Pimenta muida is found in most grocery stores in the international aisles. If you can find it, sambaal is an "ok" substitute.
