Another leftover recipe: since I had some sauce left from the previous recipe and kept it in the fridge, today I used it to make some quick quesadillas.

Another leftover recipe: since I had some sauce left from the previous recipe and kept it in the fridge, today I used it to make some quick quesadillas.

Start by making the sauce. You can find the recipe linked here.

Next, take the two tortillas and heat a skillet over medium-high heat. Place one tortilla in the skillet, then add two slices of goat cheese cut into rectangles and spread them out. Leave a border around the edge, as the cheese will melt and spread when you start eating.

Add a layer of the sauce, then top with a little more cheese—grated Parmesan in this case.

Place the second tortilla on top and cook until golden on both sides.

Remove from the skillet, cut into 4 pieces, and serve. I served it with some air fryer potatoes (recipe also linked). Enjoy!
