My Mom’s Delicious Greek Cabbage Rolls in Tomato Sauce

Blanch the cabbage and carefully separate the leaves one by one.

In a large bowl, mix together the ground beef, rice, diced onion, 1 level teaspoon salt, black pepper, chopped parsley, 4-5 tablespoons olive oil, and 1/4 cup water. Mix well.

Place some filling on each cabbage leaf and roll up to form the cabbage rolls.

Place the thick stems and leftover cabbage leaves on the bottom of a large pot. Arrange the cabbage rolls on top. Add a little grated tomato, salt, pepper, the remaining olive oil and vegetable shortening, a bit of chopped hot pepper if using, and enough hot water to come just below the top of the rolls. Place a plate on top of the rolls to keep them from opening while cooking. Cover with the pot lid and set the heat to medium-high (about 7).

Once it starts to boil, reduce the heat to medium (about 5) and simmer for about 1 hour (60 minutes). Add more hot water if needed until the rolls are cooked through.
