MILK CAKE (DOODH HALWA)From Fresh Cow Milk

My elder brother, who is like a father to me, feels as content as if he's met God when he gets to eat MILK CAKE ( MILK HALWA. So, just for him, I made small quantity of MILK HALWA. I used fresh cow's milk instead of full-fat milk so it wouldn't be too heavy for him.

Steps

Set the milk to boil in a tall non-stick kadai. Stir it occasionally. Let it reduce until it's half the original quantity.

Now, Gradually pour lemon juice into the boiling milk. Let it sit for a bit, then stir. Once it thickens slightly, add sugar.

Keep boiling and stirring occasionally. The mixture will bubble vigorously; at this point, add 1/2 teaspoon of ghee at a time and continue stirring. This will prevent excessive bubbling. When the bubbling stops and ghee starts to separate, turn off the gas and continue stirring constantly.

Now, grease a rectangular container with ghee and transfer the mixture into it. Garnish with almond slivers and cover it with aluminum foil. After 2 hours, it's ready to eat.
