Steps

Sauté the onion in the oil, then add the potatoes and salt.

Cover and cook over medium heat, stirring occasionally. Beat the eggs in a bowl and pour in the contents from the skillet.

Important: Let the potatoes rest in the eggs for a few minutes so they soak up the flavor.

Pour everything back into the skillet over medium heat. After a few minutes, flip the omelette and let it finish cooking with the residual heat. It's ready!
