Prep the Meat.
Pat the sirloin tip roast dry.
Season all sides generously with salt and pepper. - 2
Brown for flavour
Heat oil in a large skillet over medium-high heat.
Sear roast on all sides until nicely browned (about 3–4 minutes per side). - 3
Build the Base
In slow cooker add onion, garlic, chipotle peppers, adobo sauce, chili powder, cumin, smoked paprika, oregano, sazon goya, bay leaves and diced tomatoes (if using).
Place browned roast on top.

Pour in beef broth.

Cook Until Tender
Slow Cooker: Low 8 hrs or High 5 hrs
Instant Pot: High pressure 60–70 min, natural release 15 min

Shred
Remove roast to a cutting board and shred with two forks.
Return shredded beef to the cooking juices. Stir in lime juice. - 7
Serve
Spoon beef into warmed corn or flour tortillas.
Top with chopped onions, cilantro, salsa, avocado, or crumbled queso fresco. - 8
Optional: dip tortillas in broth, fill with meat and top with cheese, heat on a hot surface and close, barria style.
