Take the Fenugreek seeds,rinse with plain water. Soak for an overnight night. The next day drain the water completely. Transfer to a hot pack. Close the lid. Let it be full night and day.

Nice sprouts will appear. Keep it aside. Peel off the pumpkin skin and cut into square pieces

Keep a fry pan in medium flame. Add oil, mustard seeds, urad dal, channa dal, curry leaves and chopped onion fry for two minutes. Then add the Fenugreek seed sprouts and fry for another two minutes. Now add the yellow pumpkin pieces and salt, mix well. Close with lid for a few minutes.

Open the lid, add red chilly powder and mix well. Add sugar mix and add chopped coriander leaves. Give a nice mix.Take it out from heat.

Transfer to a serving bowl. Enjoy the healthy and tasty yellow pumpkin Fenugreek seeds sprouts subji.
