Arroz con leche, or rice pudding, is a popular Spanish desert made from rice and milk.
You will find different variations of this recipe based on preference and region but this is the most popular one.
NOTES:
*This recipe yields 1420g of pudding (counting the cinnamon sticks) which makes about 9-10 servings at 145g per serving. In other words, this is a family size portion that will last you for a few days.
** You can use any white rice at hand— I used long white rice.
*** At first, you should stir the milk+ rice mixture often. After the first 5 minutes, make you need to CONSTANTLY stir it to avoid the rice from sticking to the bottom and the milk from burning.

Assemble all ingredients.

Over medium high heat, bring 2 cups of water and 2 cinnamon sticks to a boil.

In the meantime, wash rice in a sieve under running water until the water comes out clear.

Once water is boiling, add rice and bring back to a boil. Reduce heat to medium low, cover, and cook for 10 minutes.

Before the water has completely evaporated, add 2 cups of milk, 1 can of condensed milk, 1 can of evaporated milk, 1/4 tsp of vanilla extract and 1/4 tsp of salt. Mix well and bring back to a boil.

Reduce heat to medium-low and simmer for 17-20 minutes or until thickened. Make sure to constantly stir!*** Optionally: add 1/2 cup of raisins.

Serve warm or refrigerated for a couple hours before serving. Serve with a dash of ground cinnamon on top.
