Chilled Sliced Beef Tongue to Start the Year

Boil the beef tongue (see details in my other recipes), peel it while still warm, chill it, then slice it to your preferred thickness.

Place the sliced tongue in a container with the seasoning mix and smoked dried onion. Add a drizzle of oil. No need to add salt since the seasoning mix contains it. Keep chilled until ready to serve.

Arrange a few slices of tongue on a plate with washed cherry tomatoes, halved. Sprinkle with a pinch of salt, a drizzle of olive oil, and balsamic vinegar to taste.

Wash the dandelion greens, remove roots and tough stems, and chop. Place in a bowl with salt, chopped garlic, and a drizzle of oil, then add to the plate.

Serve and enjoy on hot days. This healthy dish can be prepared a couple of days in advance.
