Mix grated eggs, corn flour, onion, chillies, ginger-garlic paste, cilantro, oregano, chilli flakes, pepper, and salt.

Form a soft dough and shape into 25 small balls.

Beat 1 egg in a bowl for egg wash.

Dip each ball in egg wash, then coat with panko bread crumbs.

Heat oil until hot. Deep fry balls in batches until golden brown.

Drain excess oil on paper towels or tissue papers. Serve hot with mayonnaise and Schezwan sauce.
Tips
Ensure the oil is hot before frying for a crispy texture.
