This is a super simple, Fast and Cheap meal that is great mid week or even for a dinner party. Amazing.
Steps

Get a nice meaty pc of skin on Belly pork - from middle if possible as more meat. pat Dry with kitchen paper. Score into bottom (Meat side) about 1 cm cross and add any rub you like or some dried herbs. Try not to get any one skin.

Use 2 toothpicks or 2 sharp Scewers and poke into skin about 100-200 times do not go too deep into meat. pat dry with more kitchen paper then Fold a large pc of foil in Half place meat in middle and fold in the sides to make a tight tray.

Brush the skin with the vinegar and then sprinkly salt ontop. Place into Air Fryer and fry at 120c for 30 mins. Carefully remove and scrap off the dried salt crust.

Using a Sharp knife cut skin about 5mm down into the Slices of pork you want to carve later. This makes serving super easy.

Spray skin with a little oil, tighten the foil and back into air Fryer for 30-40 mins on 200c or until the top is really crisp - mine took 30 mins. once cooked about meat to rest for 20 mins in the airfryer turned off.

Put onto carving board and carve and serve hot with your favourite veg and of course hot mustard. ENJOY :P
