Heat oil in a kadhai. Add cumin seeds and let them splutter.

Add green chili and onion. Sauté until onions are slightly golden.

Add sweet corn and capsicum. Stir-fry lightly for 2-3 minutes.

Add salt to taste. Mix well.

Add cooked rice and lemon juice. Toss everything together.

Sprinkle garam masala on top. Mix and cook for 5 minutes.

Serve hot.
Tips
Feel free to add other vegetables like peas or carrots for extra nutrition and color.
