Dahi Tindora or Ivy Gourd in Curd gravy is such a comforting bowl of goodness. Donde is the name given to Ivy Gourd in Hyderabadi language. It's my mom's favourite Vegetable and i wanted to use it in the bestest possible way because Curd is another of her favourite. She loves Curd and always love it at the end of her every single meal. The best thing about this simple dish is that it can be made in just a few minutes with simple pantry staples.
A perfect accompaniment at mealtimes. Be it a Lunch or a Dinner, this is just right. You would love it for sure and so would everyone in the family. It's a great option for everyday meals.
Homemade fresh and flavourful creamy Curd is well beaten. And then simmered with Ivy Gourd and a refreshing bit of spices is just amazing. It is a hassle free dish. It's absolutely flavourful and aromatic. The tempering in the start of the recipe with aromatic Cumin seeds lends it a unique flavour and freshness. It is rich, creamy, savoury and tangy with all the flavours blending too well and thus making a perfect dish for guilt free homemade and pure meals. Finish it off with a generous sprinkle of fresh and homemade Garam Masala for a super comforting and a flavourful dish.

Steps
- 1
Heat oil in a pan. Add cumin seeds and let them splutter. Add sliced onions and saute until golden.
- 2
Add tomatoes and powdered spices. Cook until tomatoes soften.
- 3
Add thinly cut tindora or donde or ivy gourd. Mix well and cook until soft preferably on a medium high heat. Add a cup of water to facilitate cooking.
- 4
Lower the heat after it gets done. Add well-beaten curd and simmer gently for a few minutes. Do not cook for a long time after adding curd. Just simmer on a low to medium high heat for 4-5 minutes. That's it.
- 5
Season with salt. Garnish with garam masala along with freshly chopped coriander leaves. And serve right away alongside steamed rice and rotis both. Enjoy!
