In a medium bowl, combine boiled rice and milk. Mix well.

Add curd and salt. Mix until smooth.

Heat oil in a small pan. Add mustard seeds and let them crackle.

Add cumin seeds, curry leaves, and udid dal. Sauté briefly.

Add green chilli and stir for a few seconds. Turn off the heat.

Pour this tempering over the rice mixture and mix well.

Add chopped carrot and red bell pepper. Mix again.

Garnish with coriander and extra green chilli if desired. Serve.
Tips
For added flavor, you can include chopped onions or a squeeze of lemon juice.
