Ingredients

20 minutes plus marinating and cook time
6 servings
  • 4 tablespoonscanola oil, divided
  • 2 tablespoonslemon juice
  • 1 1/2 teaspoonsseasoned salt
  • 1 1/2 teaspoonsdried oregano
  • 1 1/2 teaspoonsground cumin
  • 1 teaspoongarlic powder
  • 1/2 teaspoonchili powder
  • 1/2 teaspoonpaprika
  • 1/2 teaspooncrushed red pepper flakes
  • 1 1/2 poundsboneless skinless chicken breasts, cut into thin strips
  • 1/2red pepper julienned
  • 1/2green pepper julienned
  • 4green onions sliced
  • 1/2 cupchopped onion
  • 6flour tortillas 8 inch warmed

Steps

20 minutes plus marinating and cook time
  1. 1

    In large bowl, combine 2 tablespoons oil, lemon juice and seasonings, add the chicken. Turn to coat, cover. Refrigerate for 1-4hours.

    In a large skillet sauté peppers and onions in remaining oil. Remove to plate and keep warm.

    Drain chicken and discard marinade. In the same skillet, cook chicken until no longer pink. Return pepper mixture to pan, heat through.

  4. 4

    Spoon filling down center of tortillas; fold in half. If desired add additional toppings such as shredded cheese, salsa, taco sauce, guacamole, sliced red onions, sour cream.
