Jewish Apple Cake

What do you do on rainy days? You bake a cake ... For some reason or the other I have either a fruit or veg that needs to be used up ASAP ... This time it was apples ... I was pretty grateful that I got to use 4 in this recipe which meant I only had 6 more left to consume ... With winter in full swing here I have been busy loading up my 4 year old with apples, oranges and kiwi fruit every evening .... She kind of got tired with the apples, so in the cake batter it went!
This recipe is perfect for afternoon tea. The combination of cinnamon and apple is just heavenly! It's really delicious and moist and a perfect way to get some apples in your kids too ... they won't even know it!

Ingredients

45 mins
  • 4apples peeled and grated
  • 4eggs
  • 2 cupsflour
  • sugar 2 cups
  • 4 tspsbaking powder
  • 4 tspscinnamon
  • 1/2 tspsalt
  • 1 tspvanilla
  • 1 cupoil

    Preheat the oven to 180C

  2. 2

    Oil and flour your cake pan and set aside. I would have used a bundt pan but I recently got rid of it and never actually replaced it, so a regular round cake pan was used instead.

    Peel and grate 4 apples and place in a bowl.

  4. 4

    Take another large bowl and beat the 4 eggs. Add the sugar, oil and vanilla and continue to whisk away until it is well creamed.

    The rest of the dry ingredients go in next: flour, baking power, cinnamon and salt. Mix well until combined

  6. 6

    Slowly add in the grated apples and fold in to the batter until it is well blended.

  7. 7

    Pour the batter into the cake pan and bake until the cake is fully cooked through (a tooth pick should come out clean when poked into the cake). Took me about 45-50mins

  8. 8

    Let the cake cool completely before flipping it out of the cake pan.

  9. 9

    For the finishing touch, dust it off with some icing sugar and serve!
