Caramel apple cookies

Mix 1 cup granulated sugar and 1 stick room temperature butter until light and fluffy then mix in 1 egg and 2 tsp vanilla (it’s a lot easier to use an electric mixer here but I don’t have a stand mixer and my gas mixer genuinely hates me so I’m using a fork)

In a separate bowl whisk together 1 3/4 cup ap flour, 1/2 tsp baking powder, 1/2 tsp baking soda, and a pinch of salt

Carefully combine wet and dry ingredients without over mixing

Pre heat oven to 350 degrees

Place the dough on a pan a chill in the freezer for 30 minutes

Bake for 10-12 minutes DO NOT OVER BAKE then transfer to a cooling rack

In a pan heat 1/2 cup sugar and 1/8 cup water and stir until combined let sit on the stove stirring occasionally until mixture is clear, at this point do not stir anymore

Once mixture is a golden brown color stir in 3 tbs butter, remove from heat and stir in 1/4 cup heavy whipping cream then set aside

Add 1 stick butter, 1 tbs milk, 1 3/4 cups powdered sugar and 1/4 cup caramel to a bowl and whisk until combined to create a frosting then set aside

Add 1 1/2 cups diced apples, 1 cup sugar, and 1 tbs heavy whipping cream to a pan

Heat the pan on low and stir until the sugar caramelizes then set aside

Pipe the frosting on to the cookies

Spoon apple topping on to the center of each cookie and drizzle the remaining caramel on to the cookies
Tips
If the Caramel is too thick to drizzle mix in some of the extra liquid from the apple topping
