Beans and Fried Plantain Recipe

This beans dish is pure comfort food. I cook the beans until just tender, then stir them into a palm oil sauce with scotch bonnet, onion and crayfish.
A little fresh ginger adds a sweet twist you don't expect.
It's special because it's simple, filling and full of flavour. My favourite way to eat it is with golden fried plantain and crispy fried fish on the side.
