Steps
- 1
In a saucepan, combine the cocoa powder, sugar and cornstarch. Whisk together until evenly mixed and free of lumps. Gradually add the milk, whisking continuously to form a smooth mixture
- 2
Place the saucepan over medium-low heat and cook, stirring continuously, until the mixture begins to thicken
- 3
Add chopped milk chocolate and continue stirring until completely melted and incorporated
- 4
Stir in the vanilla and continue cooking for another minute or two, until thick, smooth and glossy
- 5
Remove from the heat and transfer to a clean bowl. Cover the surface with cling film, making sure it touches the fudge to prevent a skin from forming
- 6
Let it cool completely before using as a cake or dessert filling. I used mine to fill a 4-layered 7-inch Matilda Chocolate Cake
Tips
Keep refrigerated and use within 4–5 days. Bring to room temperature and stir until smooth before using
Filling firms up further as it cools. Don't overcook it trying to achieve your final desired consistency while it's still hot
