Creamy Butternut Squash Soup

I’m always up for trying a new recipe, especially one that fits the season. Soup is perfect for fall, and while I’ve used butternut squash in recipes before, I had never tried butternut squash soup.
So, I thought I’d give it a try—and to my amazement, it came out wonderful!
Steps
- 1
Prepare the squash. Peel the butternut squash, remove the seeds, and cut it into roughly 1-inch cubes.
- 2
Sauté the garlic. Melt the butter in a large pot over medium heat. Add the minced garlic and cook for about 30 seconds, stirring so it doesn’t burn.
- 3
Simmer the squash. Add the cubed squash, broth, onion powder, salt, pepper, and optional cinnamon or nutmeg. Bring to a boil, then reduce the heat and simmer for 20–25 minutes, until the squash is very tender when pierced with a fork.
- 4
Blend until smooth. Turn off the heat and use an immersion blender directly in the pot. Blend until completely smooth. If the soup is too thick, add a little more broth.
- 5
Add the heavy cream. Reduce the heat to low and stir in the heavy cream. Warm gently for 2–3 minutes without letting the soup boil.
- 6
Taste and serve. Adjust the salt and pepper as needed. Serve warm and enjoy!
Tips
For extra flavor, roast the squash at 400°F for 25–35 minutes with a little olive oil before adding it to the soup. For a richer soup, start with ½ cup heavy cream and add more to taste. Refrigerate leftovers for 3–4 days. Freeze leftovers for longer storage; for the best texture, freeze before adding the heavy cream, then add the cream when reheating.
