OK I know Spag Bol isn't a real thing and that they don't eat it in Italy. By deduction Spag Bol soup is even less of a real thing. I suppose I must have invented it.
Go me!
We like to have a hearty soup for tea rather than a big meal and this is perfect. It makes a hearty meal for two or a dainty starter for four.
All measurements are approximate as i rarely measure anything

Ingredients

2-4 servings
  • halfa pound of lean beef mince
  • cantomatos
  • 1onion
  • squeezetomato puree
  • big spoon of pesto
  • a fewsun dried tomatos
  • teaspoondried Oregano
  • to tastesalt
  • bundlespaghetti about 25mm across
  • Grated dried Parmesan
  • leavesfew fresh basil

Steps

  1. 1

    Give the meat a good browning over a high heat. You might add a touch of olive oil if it's very lean and starts to burn. If its fatty pour off the fat.

    Chop your onion. You can do it as fine as you like. I went crazy and added a bit of sun dried tomato here too

    Add onion, tomato, oregano, pesto, sun dried tomato and enough water to make two bowls of soup to the mince. Bring to the boil and simmer for 45 min to an hour.

    When its cooked add a little salt to taste then break the Spaghetti into the liquid. And cook till its Al Dente, or however you like it.

    Serve with a sprinkle of Parmesan and a bit of fresh basil. Then take a picture and post it on my page LOL

I love to cook. I have been cooking since I can remember and like to create dishes that are just a bit different.I am also a bit of a cheat. I like authentic flavours but if I am cooking for a dinner party I want to spend time with my guests rather than slaving away in the kitchen while they are drinking wine at the table.I like to think that my recipes are quick and relatively easy.I try to keep fat and salt to a minimum and use Olive or Rapeseed oil as somebody told me that it was healthy.I almost never cook with salt. My blood pressure is borderline and I am told that too much salt isn't good for you.Sugar is my biggest wind up! I like sugar in sweet things like cake and ice cream but why do they have to put it in Gravy?I check the ingredients of everything I buy and if a savoury product lists sugar on the ingredients then it goes back on the shelf.
