Matumbo (tripes) served with ugali and spinach

Wash your matumbo well in running water.

Place it in boiling water for about 15 minutes. Pour excess water and rinse it again.

Let it boil again for about 2 hours untill it's well cooked. Tender. You can taste a piece.

Fry onion in another sufuria, add the matumbo and stir then add capsicum, tomato and crushed garlic and cooking oil and cover.

Stir the ingredients and add a little water. Set aside once ready.

In a pan, place your spinach add a little water and cover and let steam.

Serve with ugali. Enjoy.
