Peel the potatoes and dice into halves..

Put cooking oil in a sufuria and let it heat up for 30 seconds.

Add diced onions and stir till golden brown.Then add tomatoes and cover to cook for 2 to 3 minutes. Then add salt to taste.

Add chopped potatoes and and stir then cover for 2 minutes to simmer.

Add water and cover to cook for 7 minutes.

Uncover and prick to check if it ripe then add coriander..

Serve while hot. With avocado.
