You don't have to soak the beans overnight for this fasolada (bean soup). So that makes it a very quick recipe to make.

Place the beans in a pot with cold water that covers them (about two fingers over the beans). Boil for 10 minutes (from the moment they start boiling) over moderate heat.

The beans will float to the surface. Turn off the heat and wait for 30 minutes, they will puff up and settle down to the bottom.

While you are waiting, prepare your vegetables. Heat some water in the kettle.

Strain the beans and discard their water.

Place the beans, the vegetables and the oil in the pot.

Add piping hot water until you cover them (two fingers over the beans) and simmer for about an hour or until the beans are tender.

Season with salt, add the sauce or the tomato paste and the red pepper. Continue boiling for a little longer until the food gets a bit mushy.

If you are in a hurry, leave the lid off for a while. This helps it get mushy faster.
