Steps

Cook pasta according to directions in plenty of salted water
- 2
Chop courgettes into smallish dice
- 3
Fry courgettes in olive oil with garlic for 5 for 10 minutes until soft
- 4
Add tomatoes, capers, olives and artichokes and heat through
- 5
Drain pasta and add to sauce
- 6
Finish with parlsey and grated parmesan
- 7
Serve with a mixed salad
