Ingredients

  1. 4 largetomatoes
  2. 1(8oz.) cream cheese, softened
  3. 1/4 cupMinced fresh parsley
  4. 1 1/2 tspFresh basil or 1/2 tsp. Dried basil
  5. 1 cloveGarlic, minced
  6. 1/4 tspeach of salt & pepper
  7. 1/4 cupa.p flour
  8. 1 cupPanko bread crumbs (I used the whole wheat)
  9. 1egg
  10. 1 tbspmilk
  11. 3 tspbutter
  12. 3 tbspolive oil

    Cut each tomato into 4 thick slices; place on paper towels to drain

  2. 2

    Meanwhile in small bowl beat cream cheese, parsley, basil, garlic, and salt & pepper, until blended

  3. 3

    Spread cream cheese mixture over 8 tomato slices; top with remaining tomato slices

  4. 4

    Place flour and bread crumbs in separate shallow bowls. In another bowl whisk egg and milk. Coat the top and bottom of each tomato sandwich with flour, then dip in egg mixture, then coat with breadcrumbs

    In a large skillet heat butter and oil over medium-hot heat. Fry tomato sandwiches in batches for 3-4 minutes on each side or until golden brown. serve immediately

Just made these and they were excellent. Used green black krim tomatoes instead of red.
