I saw Jacques Pépin do this once when I was a kid. It always stuck with me as a cool way to handle an orange.
Steps

Slice off the dimpled ends of the orange, so that the meat is visible.

Following the curve of the orange, slice off the peel. Cut only deep enough to remove the membrane just beneath the peel.

Slice out the wedges.
- 4
Just cut on either side of the membrane that divides each wedge.
- 5
Serve as desired. Eat em Just, or toss them in a salad. They're great tossed with mint, shaved fennel, a little salt and olive oil.
