Ingredients

  1. 2zuccini halved
  2. 1/4 cuponion, chopped
  3. 2 cupshredded white fish
  4. 1 envelopeRed Fork lemon herb seasoning sauce with garlic and olive oil
  5. 1salt and pepper to taste
  6. 1shredded parmesan cheese

Cooking Instructions

    Preheat oven to 425°

    Cut zuccini in half. Scoop flesh out with spoon or melon baller. Set aside.

    Add zuccini to boiling water for 1 1/2 minutes to soften.

  4. 4

    Sauté onion and zuccini flesh in skillet.

  5. 5

    Next add fish, and seasoning until heated through.

  6. 6

    Place zuccini boats in baking dish and fill with stuffing. Top with parmesan cheese and bake for 30 minutes or until cheese is melted and boats are heated through.
