Fridge leftovers scrambled eggs

This is a great way to get rid of any scraps laying around in the fridge. It can be adapted for portion sizes and the vegetables in the recipe, this goes for the eggs, milk and bread too! It is quick, easy and filling!

This is a great way to get rid of any scraps laying around in the fridge. It can be adapted for portion sizes and the vegetables in the recipe, this goes for the eggs, milk and bread too! It is quick, easy and filling!
Steps

Chop onions and tomatoes.

Crack eggs into a bowl and whisk with milk.

Preheat saucepan and add Olive oil. Put in chopped veg.

On a moderate heat place spinach in another saucepan with 2 teaspoons of water. Cover and leave for 4 minutes.

Fry the onions, tomatoes to your liking and add the spinach when ready.

Keeping at a moderate temperature add the eggs, leave for twenty seconds and start to fold the mixture.

Toast the bread to your liking, cut in half and ready them on a plate. Keep folding the mixture for 3-4 minutes. Add salt and pepper to taste.

Once the mixture is to your liking, serve directly onto toast and enjoy!
