Potato Croquettes
Tasty. I love the fact that I get to use left over products.

Into a bowl, mix together the mashed potatoes with egg, sparsely,garlic and butter. Then set aside.

Whisk the eggs in a dish, sprinkle with salt and pepper and set aside.

In a separate shallow dish combine the bread crumbs with salt and a little pepper.

In a large skillet, add enough oil to come up about an inch on the sides of the pan. Allow oil to get nice and hot over about medium heat.

When oil is ready start forming your buttons.

Mould your mashed potatoes into long strips. and chil for 15 minutes.

Then deep each one in the beaten eggs and roll them in bread crumbs

Place them in hot oil and cook for a few minutes on each side until golden brown and crispy. This should be for a few minutes.

Drain in paper towel lined plate.

Serve.
