Ingredients

  1. 200 gdried macaroni
  2. 2 tspextra virgin olive oil
  3. 2medium onions/ chopped finely
  4. 275 mlmilk
  5. 1-2vegetable stock cube
  6. 50 gbutter
  7. 40 gplain flour
  8. 175 gstrong cheese (Cheddar)
  9. Pinchnutmeg
  10. 1 tbspEnglish mustard
  11. Salt & pepper

Steps

    Cook the macaroni in plenty of boiling water, until just cooked, then drain well, add 1-2 tsp of extra virgin olive oil to stop the pasta sticking together

  2. 2

    Add oil in a separate large pan, add the onion and cook for 5 minutes to soften

  3. 3

    Add the milk, stock cube then bring to the boil

  4. 4

    Meanwhile mix the butter and flour together, to form a paste texture

  5. 5

    Once the milk is boiling, turn down the heat to a simmer, then mix in the butter and flour paste, and cook gently for 2 minutes

  6. 6

    Take off the heat and stir in 125g of the cheese and the cooked macaroni

  7. 7

    Add a pinch of nutmeg, mustard, pepper, salt.

  8. 8

    Oven some bread untill its hard and crunch over the set maceroni

  9. 9

    Spoon into an ovenproof dish, add the rest of the grated cheese (50g).

  10. 10

    Then brown under a hot grill or in the oven for 6-10 minutes
