Cheesy Sausage stuffed in Pattypan Squash

When I was a kid me and my brothers would fly the pattypan squash around like flying saucers. My Mom would cook them and we would eat the flying saucers without us knowing it. The squash became harder and harder to get throughout the years. I didn't know how to cook them and I thought you had to peel them, like spaghetti squash. So I asked my Mom how to cook them and did they have to be peeled. She chuckled and said that it was easy and no need to peel just cook them like yellow squash.

I was craving a cheesy dish but not the heavy feeling of the pasta that comes with it. This dish is a good compromise and a good way to get the kids to eat more veggies. Add some cooked and sliced chicken to make it even more hearty. Christina -

Squash is a mild vegetable in many forms and tastes. This one is called chayote in Mexico and California, and Christophorus in Europe because Christopher Columbus brought it back from his trips. The size of an apple, it tastes like potato or cucumber or zucchini when fried or baked. Fries like bacon, 3 minutes per side. Makes a great cheese sandwich. Hobby Horseman -
