89. Spicy Fried Tuna with Chili Sauce

Prepare all ingredients

Prepare the Spice Paste
Blend garlic, shallots, tomatoes, lemongrass, palm sugar, salt, and shrimp paste until smooth. Add 3 tablespoons of oil if needed to help blend. - 3
Fry the Fish
Heat cooking oil in a pan and fry the sliced fish until golden brown and cooked through. Remove and set aside. - 4
Sauté the Spice Paste
In another pan, heat some oil. Add the blended spice paste and sauté until fragrant. Add Aromatics
Lightly crush the galangal. Add it into the spice paste together with kaffir lime leaves and Indonesian bay leaves. Stir until the spices change color and become aromatic. Add water stir evenly - 5
Combine with Fish
Add the fried fish into the spice mixture. Stir gently until the fish pieces are evenly coated with the spices. Add the seasoning. Correct the taste - 6
Finish & Serve
Turn off the heat. Serve the spicy Fried tuna with Chili Sauce warm with steamed white rice.
