1 eachshallot
2 eachlemon - juiced
1/4 cupsherry vinegar
1/2 tspcumin seed - roasted
1/2 cupolive oil

Puree peppers, shallot, lemon juice, vinegar & cumin seed.

With motor running, gradually add olive oil and process until smooth.

Season with salt & freshly ground pepper.

Store in refrigerator in an air tight container. no longer than ten-days.
