Easy, simple and yummy. I used chives this time and its tasty than parsley.

Preheat the at 200 C.

Wash the potatoes well, and then cut half lengthways.

Brush a roasting pan with olive oil and place the potatoes, cut side downwards.

Bake for 25 minutes.

In the meantime, mix together all the ingredients for the cheese dip, reserving 1 tablespoon chopped chives or parsley for garnish. Then spoon into a bowl and garnish with parsley or chives.

When potatoes are cooked, remove from the oven. Heat the broiler (grill) to 250C.

Carefully take the potatoes off the roasting pan and season the flat side with salt and pepper. Place the bacon on top of tge potatoes and cover with the cheese. Place under boiler until golden brown. Serve potatoes on a plate, together with the cheese dip.
