Preheat oven to 200c

Place pork fillet in small oiled baking dish, combine tomato paste and seeded mustard and spread evenly over pork

Overlap prosciutto slices over pork completely covering top, secure with toothpick if you wish

Bake in preheated oven at 200c for 30 minutes. Reduce temperature to 180c half way through, rest for 10 minutes

Meanwhile heat butter in a pan, add some sage and cook for 30 seconds or until leaves become crisp

Cut pork into slices and serve garnished with the fried sage leaves

Accompany this dish with steamed vegetables and couscous or roast potatoes with salad would be lovely also
