Combine chopped fruit, port & cinnamon in a bowl, cover & stand at least 2hrs.

Line 11 x 25 loaf pan with baking paper to extend up over sides.

place 2 lit Ice Cream in a bowl and allow to soften slightly, stir fruit mix through Ice Cream

Process almonds until finely chopped, Sprinkle half chopped almonds over base of pan, pour in lce Cream mix, sprinkle over remaining nuts., freeze over night
- 5
SAUCE. Simmer Apricot nectar in small saucepan for about 15 min or until reduced & thickened , allow to cool
