Ingredients

12 servings
  • 2 tbspolive oil
  • 3chopped carrots
  • 3chopped parsnips
  • 2stalks celery chopped
  • 1 largeonion chopped
  • 1 smallbunch thyme
  • 1sea salt
  • 1black pepper
  • 2 lbBone in Chicken Breast
  • 6 cupchicken broth
  • 1 cupsmall pasta
  • 2 tbspfresh squeezed lemon juice
  • 1/4 cupchopped parsley

  1. 1

    heat oil in soup pot. add carrots and parsnips celery onion thyme salt and pepper. Cook 10 minutes stirring often.

  2. 2

    add chicken, broth, and 4 cups water. bring to boil. reduce heat. simmer 20 minutes. remove chicken. remove bones and shred chicken.

  3. 3

    add pasta. Cook 10 minutes. add chicken lemon juice and parsley.

    enjoy!!!
