  • 1Black pepper
  • 1 tspextra-virgin olive oil
  • 3 tbsptomatillo sauce
  • 1/4 mediumavocado

Steps

  1. 1

    Combine egg in a medium bowl. Season with pepper (if desired); whisk to blend.

  2. 2

    Heat oil in medium skillet over medium-low heat.

  3. 3

    Add egg mixture; cook, stirring ocassionally, form3 to 4 minutes, or until eggs are set

  4. 4

    Top eggs with salsa and avocado.
