pre-heat oven to 110 ·c

beat egg whites stiff & dry

gradually add 2/3rds of sugar & continue to beat until mix holds shape

add flavouring

sift remaining sugar & baking powder into mix & fold thoroughly in.

using wetted tbspoon, put onto baking tray sprayed with 'spray&cook'

bake in oven for 1 hour

allow further time for drying out after oven is turned off

when cold - decorate with cream & fruit
